{Porkchops and polenta pizza}

Hrmm.. what NOT to eat before a workout class..

Made a polenta pizza with some quick cooking cornmeal, parm, salt and pepper – poured it into a tart pan and cooled in the fridge. Top with some tomato sauce, grilled veg (I used zucchini, mushroom, green pepper), sundried tomatoe, extra old white cheddar, feta, and some black truffle oil (gahhh. love this stuff) and pop it in the oven at 400 for about 1/2 an hour.

For the porkchops: grilled on med-high heat in pan for about 8 min, made a sauce of grilled mushrooms + onions, garlic beef broth, fairwinds farm sour cream, little tomatoe sauce,oregano, thyme, season and a bit of flour to thicken.

Voila! dinner is served.

..and some mini eggs for dessert 🙂
