{Recipe: A twist on beet and goat cheese}

This was an appetizer I had made a while back for my mom when she came over for dinner (the CHEF EXTRODINAIRE herself!) I was quite happy with the way it turned out: fresh flavours and vegetarian. Makes a great summer dish 🙂

Ingredients:

  • chiogga beets (also called candystriped beets)
  • goat cheese
  • juice of an orange + zest
  • cherry tomatoes
  • mango sliced in cubes
  • avocado
  • macadamia nuts
  • fresh ground pepper
