{Recipe: Apple pecan caramel tart}

Ah.. so I’ve had this craving for the perfect apple pie for the last few months here. I remember Costco used to make the most delicious deep dish apple pie, 2 inches of thinly sliced juicy apples, coated generously in cinnamon, nestled in a perfect flaky crust with a caramelized golden brown lattice top. It was absolutely divine! Alas, they no longer make this delicious pie, and since then I’ve been on the search for something to replace it.

In the meantime, heres a quick recipe that takes about 10 min to prep and  15 min in the oven. A quick fix to help tame that apple pie craving.

Apple pecan caramel tart

  • 1 frozen puff pastry sheet (defrosted at room temp as per box instructions)
  • 2 apples ( i used gala)
  • 1 T sugar
  • 2 tsp cinnamon
  • 1/4 c chopped pecans
  • 2 T butter cut into small cubes
  • dulce and de leche sauce (you can get this in a jar at superstore, or make it yourself)

Slice apples, coat in sugar and cinnamon. Place puff pastry sheet in a fluted tart pan (or just on a baking sheet and fold up edges). Arrange apples in a circular pattern on your puff pastry sheet. Top with pecans and drizzle caramel sauce. Bake at 400 for 15 min. Serve with a scoop of your favorite vanilla ice cream.. Divine.
