{Dine in: Bison- the other red meat}

Homemade bison burger sprinkled with crumbled feta, sitting atop slices of avocado, silvers of red pepper, caramelized onion  and pea shoots on a toasted bun. Served with a side of mixed green, diced pink lady apples, slivered almonds, dried cranberries and maple balsamic vinaigrette.

Where does one find bison meat in Calgary? Lucky for me, I live only a few blocks away from Valta Bison. They have two locations in Calgary, one in Ramsay and the other in a booth at the Calgary Farmer’s Market. The stores are owned by Darlene Hegel and her husband Gil. Their meat comes from their farm, located at Valhalla Centre, a farming community in the Peace region.

Bison is a lean, tender and flavourful alternative to beef. Some of my favourites from their store include their thinly sliced smoked bison meat (great for sandwiches or on a salad) and their ground bison meat (so versatile – great for making homemade burgers, shepherd’s pie, spaghetti meat sauce, chili, the possibilities are endless).

Their Ramsay store carries a variety of local items too, like preserves, sauces, frozen thin crust pizzas (love the three cheese one), fresh produce, Springbank cheeses and even baked goodies (awesome applesauce cake – grandma’s recipe). They’re always bringing new items in too and the staff are always more than willing to offer samples..

BTW, you HAVE to try the homemade vanilla caramels. They are the best caramels I’ve EVER had. Creamy and soft and smooth..you’ll never want to eat another caramel again.

    Hey, you only live a few blocks from Valta bison?? I only live a few blocks from Valta bison! I was just talking to Darlene (and admiring those caramels again..) yesterday!

    I love bison too, and we use ground bison in place of ground beef in many a pasta sauce or stuffed peppers. The salad looks delicious too!
