{Recipe: Chocolate Pudding Cake and Dark Chocolate Dreams}

When I get a chocolate craving, it comes with a vengeance. Solution: why not make a chocolate pudding cake! I made this pan the other day and this is all that is left! This is a recipe I’ve had written in my recipe journal in my “must-make soon” list for a while now. This cake is composed of two different layers, the top is a moist chocolate cake and the bottom is a gooey thick chocolate pudding sauce. Rich, satisfying and easy to make, a sure way to quiet that chocolate craving.

Mmm…fudgey and intense chocolate flavour in every bite.

Chocolate pudding cake (adapted from Sunday Nite Dinners)

1 cup all-purpose flour (I used whole wheat pastry flour)
2/3 cup unsweetened cocoa powder
1/2 teaspoon baking powder
3/4 teaspoon salt
2 large eggs
1 cup granulated sugar
3/4 cup milk ( I used almond milk)
4 tablespoons unsalted butter, melted and cooled
2 teaspoons pure vanilla extract
3/4 cup firmly packed dark-brown sugar
1 1/2 cups boiling water
1/3 cup dark chocolate chips

1) Pre-heat oven to 350° F. In a large bowl, sift together flour, 1/3 cup cocoa powder, baking powder, and salt, set aside.

2) In a medium bowl, whisk together eggs, granulated sugar, milk, butter, and vanilla; add to flour mixture. Stir batter until just combined. Spread batter evenly into an 8 cup shallow baking dish. Set aside.

3) In a medium bowl, whisk together remaining 1/3 cup cocoa powder, brown sugar, and boiling water. Pour liquid evenly over batter, do not mix. Distribute chocolate chips into batter. Bake until a tooth pick or skewer inserted into the center of the cake comes out with crumbs adhering to it, 30 to 35 minutes. Let cool 10 minutes. Makes 6 to 8 servings. Serve this with a scoop of your favourite ice cream or if you’re like me..

Peanut Butter & Co’s Dark Chocolate Dreams a.k.a. THE BEST THING EVER! If you like peanut butter and chocolate, you MUST try this! I like this swirled into my greek yogurt with granola and slivered almonds, drizzled over vanilla frozen yogurt, melted into my hot oatmeal, or blended into my banana smoothie. You can also substitute it for regular nut butter in your baking (dark chocolate peanut butter cookies!) or just eat it straight up with a spoon, WAAAY better than a Reese peanut butter cup. The company also makes other flavours like Mighty Maple, White Chocolate Wonderful and Cinnamon Raisin Swirl (my 2nd favourite flavour).

I picked up this delight at Sunterra, it’s Roger’s Earl Grey High Tea Chocolate Bar made with organic dark chocolate and silk road organic tea. I’m always a sucker for anything Earl Grey and this chocolate did not disappoint. The bergamont flavour really came through. Craving satisfied.
