{Holiday Cookie #3: Flourless Peanut Butter Chocolate Cookies w/ Candied Bacon}

Happy Saturday everyone!

Last night me and the boy had our date night, so after work we headed over to the Marketbar at Sunterra for some vino with a cheese and charcuturie board and then went to see the much-anticipated “Black Swan” with Natalie Portman. I’ve been very excited for the release of this movie since I’m a huge fan of Darren Aronofsky (loved Pi and Requiem for a Dream) and Natalie Portman is an incredibly talented actress. It just came out Friday, so the theatre was packed. The movie lived up to my expectations! It was amazing!! Word of warning, this is not a feel good ballet movie (as many older women in the theatre had expected, I even heard one lady declare as we were leaving “WELL! That movie ruined Swan Lake for me“. If you are familiar with this director’s work, you’ll have an idea of the style of this movie. It’s very dark and has intense moments of sexuality. Portman embodies both the white and black swan amazingly and I can see now why she is touted to win the Oscar best actress award for this role…Ok, enough movie talk, onto the food..

The third cookie in my holiday baking series is one that is sure to make pork lovers salivate. Now I know you are all familiar with my signature applewood smoked bacon chocolate chunk walnut cookies. They are always a big hit, but one comment I get is that the bacon flavour does not come through as much as they’d expect. Tonight I experimented with a new recipe so that when you bite into it, there is no mistaking there are chunks of bacon goodness within…I present to you my flourless peanut butter chocolate cookies with candied bacon..

The perfect time to use my new russian doll measuring cups..  how cute are they.. starting from 1 cup (the largest top half of the doll) to a quarter cup (bottom of the smallest doll).

…Add one cup of creamy or chunky natural peanut butter to your mixing bowl..

…I melted this slightly in the microwave to get it soft enough to scoop out..

Then add your white and brown sugar and mix together till its nicely incorporated…

After that is mixed, add in your baking soda, 1 large egg and vanilla extract…till it comes together in a nice dough like this..

Meanwhile..lay out slices of country style bacon onto a silpat and sprinkled pinches of brown sugar along the top. Pop these into a 400F oven. Bake these in the middle rack for about 15 minutes, flipping midway through. *Our little kitty Jasper was going insane with the smell emitting from the oven*

While that is roasting away, chop up your chocolate into chunks.. I used a mixture of milk and dark chocolate and add that to your mixing bowl…

Flip your bacon midway, making sure to coat the other side in the syrupy juices, then 15 minutes later, they’re done! You don’t want these black or charred..we don’t want to break people’s teeth here..

When its cooled, remove them from the silicone mat and chop the candied bacon into small pieces and fold this into the batter..

Scoop balls of dough onto a baking sheet and flatten them slightly with your fingers and bake at 375F for about 10 minutes..

The boy was so smitten with these, he even sang a little bacon song…Overall I was really pleased with the results. The roasted peanut butter and bacon are a perfect match, a nice balance of salty and sweet.

A delightfully unique cookie to add to your holiday baking repertoire, I guarantee these will be a big hit 🙂

Flourless Peanut Butter Chocolate Bacon Cookies

adapted from recipe from Joy the Baker

  • 1 cup all-natural chunky or smooth peanut butter
  • 1 cup sugar (1/2 cup brown sugar and 1/2 cup granulated sugar)
  • 1 egg
  • 1 teaspoon baking soda
  • 1/2 cup milk chocolate, chopped up (or use chocolate chips)
  • about 8 slices of candied bacon, chopped into small pieces

Lay out your pieces of bacon on a silicone mat/parchment on a baking sheet and sprinkle each slice with a 1-2 tsp of brown sugar (depending on size). Bake at 400F for about 12-16 minutes (making sure to flip the bacon midway). Let it cool and chop into small pieces.

Preheat oven to 350 degrees F.

Grease a baking sheet with butter and set aside. In a mixer combine peanut butter and sugars until well combined, about 2 minutes. Add egg and baking soda and mix for another 2 minutes. Fold in cooked bacon and chocolate.   Roll into walnut sized balls and flatten slightly with moistened fingers. Bake for 10 minutes, until lightly browned. Cool on a baking sheet for five minutes. This made about 32 small cookies.

*Note: I tried one of these crumbled on some vanilla bean ice cream…too good for words. Perhaps making these ice cream sandwich cookies with maple pecan ice cream.. oh my..*
