{Recipe: Lemon Blueberry Sour Cream Pancakes with Candied Ginger}

Last week I got an invite to a private tasting event at Model Milk hosted by the BC Blueberry Council (aah..the perks of being a food blogger). Model Milk is definitely one my FAVE spots to dine in Calgary, so I was super excited to see what Justin and his team had come up with for the blueberry themed menu.

Here are some quick blueberry benefits:

1. Blueberries are super high in antioxidants which fight disease inducing free radicals in the body

2. Blueberries are known to lower triglycerides in the body and reduce cholesterol

3. Blueberries contain anthocyanins which reduces age-related memory loss

4. Blueberries contain compounds that help to prevent bladder infections and UTI’s

Now onto the food..

We started off the night with a refreshing and bubbly gin fresh blueberry citrus cocktail.

Followed by tender and chewy blueberry rosemary thyme foccacia served warm in a mini cast iron skillet.

One of my favourites was simply called the “perfect egg“. A warm runny yolk surrounded by a cloud of whipped egg white creme and topped with a blueberry compote and chives.

The creamy and rich whipped foie gras mousse dome topped with fresh blueberries and dark maple syrup on a crostini was TO DIE FOR! (I was ready to swipe that entire platter for myself).

Cocktail #2 blueberry whiskey sour – a really unique and complex flavour combination of spices. I am not a whiskey drinker at all, but I really enjoyed this drink.

Whisper thin shaved rabbit mortadella with blueberry mustard on crostini.

Other unpictured tasty tidbits we enjoyed:

  • blueberry cucumber fennel salad topped with chunks of creamy goat cheese – a refreshing palette cleanser
  • ahi tuna served with pickled blueberry, tuna emulsion and a squid ink brioche

We ended the meal with a mini mason jar of blueberry cobbler– juicy and plump warm jam-like blueberries under a golden biscuit crust topped with creme fraiche and ribbons of fresh mint

We all left with an education of the health benefits of blueberries, a goodie bag filled with recipe cards for inspiration and a few pints of bc blueberries to take home.

I really enjoy eating these by the handfuls fresh, but I also enjoy them in one of my all time favourite breakfast foods..the classic blueberry pancake..

Tweaked slightly with the addition of lemon zest to brighten the flavours and candied ginger for a spicy kick to complement the sweet juicy berries.

I finished it off with thin slices of banana, a pat of creamery butter and a light drizzle of maple syrup. The sour cream in the batter makes these the fluffiest and most tender pancakes ever. And subbing in coconut sugar makes these guys bake up this beautiful golden brown.

I guarantee the smell of these cooking on a skillet on an early Sunday morning is enough to get even the sleepiest person out of bed 🙂 Bon appetit!

Lemon Blueberry Sour Cream Pancakes with Candied Ginger (loosely adapted from Smitten Kitchen Cookbook)

  • 1 large egg
  • 1 cup of sour cream (could probably sub light, but i used regular)
  • 1/2 tsp vanilla extract
  • zest of one lemon
  • 2 tbsp of sugar (I used organic coconut sugar)
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • pinch of ground nutmeg
  • 3/4 cup organic unbleached all-purpose flour
  • 1 tsp aluminum free baking powder
  • 1/2 tsp baking soda
  • 1 cup of blueberries
  • maple syrup
  • 1 tbsp diced candied ginger (soaked in hot water for 10 min)

Preheat oven to 250F. Whisk egg, sour cream, vanilla, zest and sugar in a bowl. In a separate bowl, whisk all the dry ingredients. Fold the dry into the wet and mix until just combined and still lumpy.

Heat skillet (I used a cast iron crepe pan) to medium low. melt a pat of butter and ladle in 1/4 cup of batter at a time. arrange blueberries on top of the pancake and push in to spread the batter a bit. When you can see bubbles forming on top (3-4 min), flip the pancake with a silicon spatula and cook for another 5 min. Transfer to a tray in the warm oven until ready to serve.

Top with sliced banana, maple syrup and butter. (Freshly whipped cream if you are feeling extra indulgent)
